Lemon Protein Energy Bites

Lemon Protein Energy Bites

New Years resolutions are in full force. Its officially 2017!!!

A lot of us have New year's resolutions in mind and quite a few are health related. I am always on the search for healthy, lightweight meals while out on long hikes or backpacking trips. Typically, if you can get over 100 calories per ounce you are doing good. Well these little protein energy bites are perfect for lightweight easy snacks or small meals while on the go!

You can prepare these ahead of any trips and just store in the fridge. You can even freeze them to make a delicious frozen desert! They are perfect for the adventurer or for the busy worker!

Each ball is 1.4 ounces which is about 120 calories per ounce.

Ingredients
  • 1 cup dates
  • 1 cup cashews
  • 4 scoops or whey protein powder
  • 1/2 cup shredded coconut
  • zest from one large lemon
  • juice from one large lemon
  • 2 tablespoons of water
  • pinch of sea salt
How to Prepare:
1. This recipe makes 10 1.4 ounce balls. Combine all ingredients in a food processor and blend for 2-4 minutes or until the mixture makes a dough.
2. Roll out 10 balls by hand. Make sure they are similar in size and weigh approximately 1.4 ounces.

It is as simple as that! Store in the fridge or freezer.

Here are the Macros per ball via My Fitness Pal:
Calories: 179

For the Wild and Free Woman

This is for the women who are meant for more. For the women who have fire in the heart and a gypsy soul. Here is to the women who aren't afraid to get their hands dirty, to the women and mama's who love to feel the earth between their toes.

Here is to the women who curse. To the women who aren't afraid to speak their mind.

Here is to the women that don't care what others think. The adventurous women who walk their own path in life.  The creative beauties that get up day in and day out, rain or shine, making their dreams a reality.

Here is to the mama's working hard raising their children, knowing that they are doing it right. Being everything under the sun to make their littles grow up Wild and Free.

You are amazing women. You are wild... you are free.

Us women are hard to handle. We are strong, courageous, complicated, and magical. Confusing, loving, and meant for more than anyone can imagine.

Wild women are not meant to be stuffed away in an office. Free women are not meant to be hidden away from the world being a 'yes sir' kind of person. You will never be happy living life that way. You are meant for so much more. Our souls will disappear into the void if we watch a clock tick away. Our minds will go crazy. We cannot and will not settle.

We are not the kind of women that are willing to settle. We cannot keep a sparkling clean home, perfectly made hair, and makeup that looks just right. We are not the perfect mom, girlfriend, wife.... yet we love with all our soul. We live with every ounce in our body. We give with every bone we have and we laugh uncontrollably.

We cannot be tamed.

Wild women can't sit at a holiday party sipping champage and talking about recipes, men, or celebreties. We don't give two shits about that. We need to talk about love, life, and adventure.

Our soul needs nature. Walking with the natural dirt under our feet rather than asphault and cement. We need the wind to blow through our hair, whispering magical joy into our ears.

For too long have we hidden ourselves from the world. We have denied our souls of their true beauty. We have denied who we truly are. Society tells us to be one thing. Growing up, we try to conform to how 'we should act' what we 'should look like' what we 'should say'. Fuck Should!

We have tried to hide who we truly are for too long. Our spirit cannot be contained forever. The truth is we are unique and truly beautiful. Why would you want to deny the world of your beauty?

We have tied our wings behind our back and hidden them under our shirts to try and be who we were told we should be. Our hearts become shattered and we go about life wondering what we are truly meant for. Having an internal conflict of what we have been told compared to what we feel and what our soul says we are. Why we are hiding our real selves. We need to free our spirit and let it shine bright. Why are we trying to conform to a life that doesn't even appeal to us? Just to please people we don't care about?

We are meant to run free. We are meant to dance around a fire drinking whiskey and singing at the tops of our lungs. We are meant to howl!  Listen to the wolf calls of your soul. Listen to the fire that lives inside of you.

There is no reason to play life small. We are meant to live life big! Stop smashing your soul, hiding your heart, and working at being some form of woman that society thinks you need to be.

Why deny it? Why hide it?

Let's shed the lives that suffocate our soul. Let's get rid of the life that was never meant to be ours in the first place. Be Wild... Be Free. Normal isn't for the Wild and the Free. We won't fit. We don't fit. We were never meant to. We are meant to stand out in all of our glory. To be different. To be that girl.

Honor who you really are. Be a force of nature whirling around showing the world who is boss.

Do not deny the world of your beauty. Don't let your vibrant spirit die. Do not live the life you think you should. Fuck should.

Live the life that sets your soul on fire. Find yourself. Share your mysterious, courageous, adventurous magic with the world. Let your spirit free.

Do not give in to the should be. Do not ever settle.

Ever.

Almond Joy Protein Energy Bites Recipe

No Bake Almond Joy Protein Energy Bites

It doesn't matter if you are on the go, sitting at home, out backpacking, or hiking these energy bites are amazing! They are natural, healthy, and oh so delicious.

Typically it is hard to find good yummy recipes, that contain natural ingredients, good nutrients, and that have alot of calories while staying light weight. I have found that, while out on the trail, if you can get 100 calories per ounce you are doing good. These bites weigh approximately 1.4 ounces per bite. These bites are also small and easy to pack so whether you are running to a meeting or running to go out on the trail they are amazing for you to stay on track with your healthy eating while juggling your busy schedule.

So, without further adue lets get to it!

You will need to have a food processor to make this recipe. If you do not have a food processor, don't fret! A blender will work just as well; however, it may take a little bit longer to blend up.

Ingredients:
**makes 10 bites
1 cup dates
1 cup almonds
1/4 cup shredded coconut - unsweetened
2 1/2 table spoons of cocoa powder
pinch of salt
1 teaspoon pure vanilla extract
2 scoops unflavored whey protein powder
1 scoop of chocolate whey protein powder

Instructions:
1. Add all ingredients to the bowl of your food processor. Blend until the nuts are well chopped and a thick dough starts to form. This will be about 3 minutes. If a dough is not forming you will need to add 1 table spoon of water. You can add more water if needed; however, do not go over 2 tablespoons.
2. When all the ingredients are well incorporated, remove the blade from the food processor. Take 1 large tablespoon of dough and roll between your hands. This recipe makes 10 bites. Keep the bites in the fridge or in the freezer.

Macros:
Serving size: 1 bite
